Sunfish are probably the most universally popular fish fished in the world. They are some of the easiest to catch for youngsters or a great challenge for experienced anglers to catch the big ones. And to top it all off there isn't much that beats the sweet taste of sunfish.

Sunfish can be referred to as crappies, black bass, blue gill and pumpkinseeds. Sunfish are usually crossbred with other fish to make them worth catching. Without this true sunfish are usually of no interest to anglers because they are just too small.

In the spring is when sunfish begin spawning. It's usually in water temperatures between upper 60s to low 70s. Nests are usually built very close together forming a breeding colony. The males usually build on a sand or gravel bottom in depths from 6 inches to 3 feet. The female will deposit more than 200 000 eggs and then she will abandon the nest. The male will guard the eggs and then later the fry. He is very aggressive, attacking anything that comes near the nest including fisherman's bait.

Sunfish can spawn many times through out the summer and this usually takes place during a full moon. Larval, adult insects, crustaceans, mollusks and sometimes small fish build the diet of the sunfish. Sunfish rely heavily on their sight and smell to find their meals.

Sunfish over populate their habitats because they produce so many young. While fishing pressure is usually high the fish remain small because of the high competition for food.

The world record blue gill was caught in Ketona Lake, Alabama, in 1950. The fish weighed 4 pounds 12 ounces.

The world record Redear was caught in Diversion Canal, South Carolina in 1998. The fish weighed 5 pounds 7 ounces.

The world record Pumpkinseed was caught in Oswego Pond, New York in 1985. The fish weighed 1 pound 6 ounces.

Overall the sunfish is just an all round fun fish to catch. You can be sure that if you know where they are you won't have a problem catching them. They can turn a slow fishing day into a very successful and fun day.

Just remember that a bad day of fishing is better than a good day at work.

The French first settled on this beautiful, plush island in the late 18th century. It remained French until 1814 when it was given officially to Britain after they defeated Napoleon. Moreover, some very important estates were established, and exporting began to take place for commodities such as coconuts, cotton, and sugar cane. The Seychelles gained independence from British rule in 1976.

2. Culture

One of the nicest parts of Seychelles culture is the vast mix of people, including Africans, Europeans, and Asians. With themselves, these settlers have brought components of their cultures which have since become ingrained in the culture of the Seychelles. The people there enjoy Creole music and dance, as well as moutya, and erotic dance that came out of the days of slavery.

3. Food

Cooking in the Seychelles involves ingredients and recipes from all over the world. There are subtle French influences, Indian curries and Asian spices. Being on the sea, they naturally prepare a lot of fish. Simple recipes of grilled fish covered in fresh chillies, or coconut milk are so delicious, especially when followed with the fresh, local fruit of the island.

4. Weather

What's the best part about the Seychelle's? The weather of course. The sun always shines over this stunning island. The temperature rarely drops below 24 degrees celsius or goes above 32 degrees celsius, which means that you're always going to warm and tanned, but never so hot all you want to do is find the air conditioner. January and February is the rainy season, so if you're looking to stay dry, you'd be better off to go from May to September.

5. Fishing

If you're a big fisher or hoping to learn, then you have come to the right place. The Seychelles has some of the best fishing in the world. There is no shortage of dorado, tuna, wahoo, sailfish, or rainbow runners available to fish, catch, fry, and eat. Whether you like shallow or deep water fishing the Seychelles has something for you. !: How to Fillet a White Perch

Where I grew up in Maine we commonly went fishing for white perch. For those of you who have never had white perch, you need to find a way to try them. You'll need to go fishing, or have a friend who does, because they are not sold commercially. They are a spiny fish, but far less bony than the more widespread yellow perch caught in the Great Lakes area. In Maine we usually throw back yellow perch as junk fish.

Growing up I are my perch simply cleaned and fried. This is really quick and easy to accomplish. Just use a jack-knife to scrape off the scales, going against the grain of the scales. Then cut off the tail, the dorsal and ventral fins, and then the head. Then slit open the abdomen, from the hole left from the removed ventral fin up to the area where the head was cut off. Then use you thumb to scrape out the intestines. Wash the fish in the lake, and toss it in the bucket to go fry with corn meal. Yum.

Then a few years later my uncle Royce taught me to fillet perch. This yields a slightly smaller amount of meat to eat, but makes eating white perch quick and easy as all the bones are gone. The key is a very sharp knife. Start by cutting off the tail and head. Then cut through the skin on the back of the fish from the head end moving back beside the dorsal fin back to the tail end. Now grip the skin at the dorsal head end with either pliers or the knife and your thumb (careful here, don't cut your thumb) and rip off the skin, first one side, then the other.

Next use the sharp fillet knife slice along the side of the spine to remove the main fillet of flesh from the spine. Carry this incision all the way down to the ribs. Repeat on the other side. Now slice off the ribs, and you're left with a fillet of the perch flesh. Discard the rest of the perch. You're left with two modest sized fish fillets. It takes several of these to make a meal, unless you have been lucky enough to have caught unusually large perch. Fry these with cornmeal batter, and they rival trout or catfish for great taste. Enjoy.
